Ingredients

onion

chicken broth
low-sodium

quinoa
rinsed and drained

cup
Turkey
cooked, cut into bite sized pieces
Instructions
Heat olive oil in a stock pot over medium heat.
Add onions, carrots, and garlic. Cook for approximately 3-5 minutes, or until onion becomes translucent. Stir frequently.
Add chicken broth and quinoa to stock pot. Bring to a boil. Add turkey.
Place lid on stock pot. Reduce heat and simmer for 15 minutes, covered.
Serve and enjoy!
