Instructions
- Heat olive oil in a stock pot over medium heat.
- Add onions, carrots, and garlic. Cook for approximately 3-5 minutes, or until onion becomes translucent. Stir frequently.
- Add chicken broth and quinoa to stock pot. Bring to a boil. Add turkey.
- Place lid on stock pot. Reduce heat and simmer for 15 minutes, covered.
- Serve and enjoy!
