Ingredients
- 1 cup quinoa rinsed
- 2 cups chicken broth, reduced sodium
- 1 Tbsp garlic minced
- 1/2 shallot diced

- In a medium sauce pan, combine quinoa, chicken broth, garlic and shallot. Bring to a boil.
- Reduce heat to low, cover, and let simmer for 15 minutes or until water is fully absorbed.
- Remove from heat and let quinoa sit for 5 minutes. Fluff with a fork, serve, and enjoy!
Recipe Notes
Make a batch of quinoa at the beginning of the week to serve as a base for lunches and dinners throughout the week.
